Dr. Ruth's Almost as Good as Sex Cheesecake

I'm so bored that I might as well go to bed early, haha.

The Canucks lost 3-2 to the Predators tonight, and tried coming back from a 2-0 deficit. Not good. Then again, I also get this INVALID YEAR crap when I try to update LJ today... what the heck is up with THAT?! GRRR!

My grandma wants to pay me to spend time with her. No, it's not as bad as you might think. I'd spend time with her even if I weren't being paid to do it, but my mom thinks she has no idea of what "personal space" means. This translates to Grandma following Mom around all the time, and wanting to go out all the time. She can't hire anyone for $10 an hour or whatever! So I guess we'll see about the day of the week I do this, haha. (I could use the money, but this isn't about that... spending time with her is cool, too)


Dr. Ruth's Almost as Good as Sex Cheesecake

Servings: 8

Crust:
5 oz Graham cracker crumbs
3 tablespoons Sugar
5 tablespoons Butter melted

Filling:
16 oz Cream cheese softened
1/2 cup Sugar
1/2 teaspoon Vanilla
Salt
2 large Eggs
3 tablespoons Chambord liqueur

Topping:
8 oz Sour cream
1 tablespoon Sugar
1/2 teaspoon Vanilla
1 tablespoon Chambord liqueur
1 cup Raspberries fresh

Preheat oven to 350 Deg. F. To prepare crust: mix graham cracker crumbs, sugar, and butter. Press mixture firmly into bottom of 9" springform pan.

To make filling: mix cream cheese, sugar, vanilla, and salt at medium speed with electric mixer. Add eggs, and mix until well blended. Using a fork, gently fold Chambord into batter. Pour mixture into crust. Bake for approximately 40 minutes or until golden brown. Loosen cake from rim of pan. Let cool and remove rim of pan.

To prepare topping: mix sour cream, sugar, vanilla, and Chambord. Spread evenly over cheesecake. Refrigerate for 4 hours or until firm. Top with fresh raspberries just before serving. Chambord is a French liqueur.
